Preparation method
Start by preparing the caramelized onion – peel it and slice it into thin half-rings. Heat a pan, once hot, pour in a sufficient amount of oil and let it heat up. Add the onion to the hot oil and sauté, stirring occasionally, until golden brown, which takes several minutes. Remove the cooked onion from the pan and set aside for now.
Divide the beef into two equal parts and shape each into a ball. Add them to the hot pan and flatten them with a spatula. Cook on the first side, then flip and continue heating until the meat is done.
Meanwhile, prepare the dressing – simply combine all ingredients and mix until smooth. Spread the dressing on a larger tortilla, leaving about 3 cm free around the edges, then add chopped romaine lettuce and the cooked meat patty. Top with cheese slices, sliced pickled cucumber, caramelized onion, and nachos. Also spread dressing on a smaller tortilla and place it, dressing-side down, on top of the nachos.
