  • 500 g carrots
  • 2 tablespoons olive oil
  • ½ teaspoon dried garlic
  • ½ teaspoon smoked paprika
  • pinch of chili
  • teaspoon of honey
  • 3 tablespoons soy sauce
  • tablespoon of water
  • salt
  • pepper
  • feta for serving
  • chopped flat-leaf parsley

Preheat the oven to 210 °C and prepare a small baking dish. Clean, peel, and slice the carrots diagonally. Place them in the baking dish, add oil, smoked paprika, a pinch of chili, dried garlic, salt, and pepper. Mix everything thoroughly and place in the preheated oven for about 25 minutes; the carrots should be tender to the bite after this time.

Once done, remove them from the oven and add honey, soy sauce, and a tablespoon of water to the hot baking dish, then mix everything. Transfer the roasted glazed carrots to a plate, sprinkle with crumbled feta, and finely chopped flat-leaf parsley.
