INGREDIENTS
- 1.5 kg pork belly with skin
- 1 large white onion
- 8 cloves garlic
- 4 teaspoons salt
- 1 tablespoon whole caraway seeds
- 2 teaspoons pepper
- 2 tablespoons brown sugar

INSTRUCTIONS
- 1Preheat the oven to 230°C top/bottom heat.
- 2Score the pork belly skin crosswise with a sharp knife and salt it. Then season the meat side with salt, black pepper (coarsely grind the pepper), caraway seeds, sugar, crushed garlic, and diced onion.
- 3Line a roasting pan with aluminum foil and place the seasoned pork belly skin-side up on top.
- 4Roast for 30 minutes, then reduce the temperature to 140 °C and roast for another 90 – 120 minutes.
- 5Finally, remove the meat from the oven, wrap it in aluminum foil, and let it rest for 25 – 30 minutes.
