INGREDIENTS

  • 1.5 kg pork belly with skin
  • 1 large white onion
  • 8 cloves garlic
  • 4 teaspoons salt
  • 1 tablespoon whole caraway seeds
  • 2 teaspoons pepper
  • 2 tablespoons brown sugar

    Preheat the oven to 230°C top/bottom heat.

    Score the pork belly skin crosswise with a sharp knife and salt it. Then season the meat side with salt, black pepper (coarsely grind the pepper), caraway seeds, sugar, crushed garlic, and diced onion.

    Line a roasting pan with aluminum foil and place the seasoned pork belly skin-side up on top.

    Roast for 30 minutes, then reduce the temperature to 140 °C and roast for another 90 – 120 minutes.

    Finally, remove the meat from the oven, wrap it in aluminum foil, and let it rest for 25 – 30 minutes.
