INGREDIENTS
- 300 g cooked pasta (leftover spaghetti, penne, or other favorite pasta)
- 4 eggs
- 100 g grated Parmesan (or other hard cheese)
- 100 g mozzarella (diced)
- 100 g ham, bacon, or salami (optional)
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- Salt
- Pepper
INSTRUCTIONS
- 1If using leftover pasta, simply bring it to room temperature. If preparing fresh pasta, cook it according to package instructions and let it cool.
- 2In a bowl, whisk the eggs with grated Parmesan. Add diced mozzarella, ham (if using), and chopped onion. Add the cooked pasta to the egg mixture and mix well to combine all ingredients. Season with salt and pepper to taste.
- 3In a medium-sized pan, heat olive oil over medium heat. Pour the pasta and egg mixture into the pan and spread it evenly. Fry the frittata over medium heat for 5-7 minutes, until the bottom is golden brown and the top begins to set.
- 4If the pan is oven-safe, you can finish the frittata under the broiler until the top is golden. If the pan is not oven-safe, place a plate over the frittata, carefully flip the pan, and return the frittata to the pan to finish cooking on the other side (another 3-5 minutes).

You can use various types of leftover pasta and combine them with different types of cheese, vegetables, or meat, depending on what you have on hand.
