INGREDIENTS
- 20 g fresh mint
- 100 g sugar
- 6 tablespoons lemon juice
- 750 ml sparkling water
INSTRUCTIONS
- 1Place the torn mint into a small saucepan, add sugar and 150 ml of water. Bring to a boil and cook until all the sugar has dissolved.
- 2Mix in a large jug with lemon juice, a large handful of ice, and top up with sparkling water. Taste and add more lemon juice if needed, serve with a bit of lemon zest and more sprigs of mint in the jug.
