- 12 ripe, but firm apricots
- 160 g smoked cheese knots
- 16 slices of pancetta
- 16 mini mozzarellas
- 8 short wooden skewers
- 4 tablespoons olive oil
- Large handful of fresh basil
- Juice of 1 lemon
- Salt
- Pepper
Halve and pit the apricots. Wrap each cheese knot with a slice of pancetta. Alternately thread onto skewers: half an apricot, a wrapped cheese knot, and a mini mozzarella. Heat the grill to medium flame. Grill the skewers on all sides for about 8–10 minutes, until the pancetta is crispy, the apricots soften, and the cheese starts to melt slightly.
Prepare the dressing. In a blender or mortar, blend the basil with lemon juice, oil, salt, and pepper. Season to taste. If the lemon is very sour, add a pinch of sugar. Transfer the finished skewers to a plate or wooden board, drizzle lightly with the dressing, and serve, for example, with fresh baguette and arugula.
Chef's tip
You can add a pinch of sugar if the lemon is too sharp.
