INGREDIENTS

  • 600 g calamari (tubes)
  • 250 g baby spinach
  • 4 large banana shallots
  • 6 cloves of garlic
  • 4 sprigs of rosemary
  • 1 lime
  • Olive oil
  • Salt
  • Freshly ground black pepper

INSTRUCTIONS

    Finely chop the shallots and slice the garlic. Sauté the shallots in 2 tablespoons of olive oil until golden, then add the garlic and let it become fragrant.

    Add the spinach and whole sprigs of rosemary, season with salt and pepper.

    Once the spinach reduces its volume, turn off the heat and let it cool.

    Wash the calamari, drizzle with olive oil, juice from half a lime, and season with pepper.

    Remove the rosemary from the spinach mixture and stuff the calamari.

    Grill intensely on maximum heat for 3-4 minutes on each side. The calamari can also be prepared at home in a pan.
