Ingredients
- 150 g all-purpose flour
- 120 g butter
- 3-4 tablespoons ice water
- 125 g fresh goat cheese
- 2 large red onions
- 4 ripe figs
- 2 eggs size M
- 10 leaves fresh mint
- 3 tablespoons blanched almond slices
- 1 tablespoon sunflower oil
- Salt
Instructions
- 1First, prepare the quiche dough. Mix the flour with chilled butter, cut into small pieces. The flour and butter will become flaky. Then season with salt and add ice water. Knead into a smooth dough and let it rest in the refrigerator for at least an hour.
- 2Sauté the finely chopped onion in oil. Once golden brown, let it cool. Stir in the eggs, chopped mint, 2 tablespoons of almonds, goat cheese (save a little for the top), and season with salt.
- 3Roll out the dough into a thin disc. Line a round baking dish with a diameter of 25 cm with the dough. Prick with a fork and bake for 20 minutes in a preheated oven at 180 degrees Celsius. Then fill with the prepared mixture, arrange sliced figs on top, sprinkle with the remaining almonds and pieces of goat cheese. Bake for 35 - 40 minutes at 180 degrees Celsius.
