INGREDIENTS

  • 2 pcs common flounder fillet, approx. 150 g
  • 2 heaped tablespoons honey
  • 5 tablespoons soy sauce
  • 4 tablespoons lemon juice
  • 1/2 untreated lemon
  • 3 cloves garlic
  • 1 teaspoon dried chili flakes
  • ½ fresh Cayenne chili pepper
  • 1 handful fresh flat-leaf parsley
  • 1 handful fresh mustard microgreens
  • 1 tablespoon sunflower oil
  • Salt

INSTRUCTIONS

    Wash the fish and season with salt. In a bowl, mix honey, soy sauce, lemon juice, crushed garlic, finely chopped chili pepper, and dried chili. Mix well.

    Heat oil in a pan and quickly sear the fish (skin-side down).

    Then pour the prepared glaze over it, add sliced lemon, and bake for about 3 minutes on each side. Then remove the fish.

    Stir in chopped parsley into the mixture and reduce until a honey-like glaze forms. This will take a few minutes.

    Serve the fish drizzled with the glaze and fresh mustard sprouts.
