Krémové italské risotto s voňavým pestem z medvědího česneku a křupavými pekanovými ořechy. Ideální jarní pokrm, který kombinuje jemnost rýže Arborio s výraznou chutí první jarní bylinky.

Preparing the pesto

First, prepare the pesto – blend the wild garlic, olive oil, 40 g of grated parmesan, pecan nuts, salt, and lemon zest into a smooth paste and set aside.

Cooking the risotto

Heat a little olive oil and half of the butter (30 g) in a pan or saucepan. Add the finely chopped shallot and sauté until translucent.

Add the Arborio rice and sauté for 2–3 minutes, stirring constantly, so that it is coated in fat and becomes slightly translucent.
