Rinse the lentils and cover with water. Let soak for at least an hour. Drain the water, cover with fresh water, and cook until almost tender. This takes approximately 20 minutes.

Meanwhile, clean and dice the onion, carrots, parsley root, and celery (the smaller they are, the shorter the baking time). Cut the tomatoes into halves or quarters. Finely chop the garlic.
