  • 1.5 kg beef ribs
  • Coarse salt
  • Chimichurri sauce

First, preheat the grill. Meanwhile, pat the ribs dry with paper towels. Season the ribs evenly on all sides with salt.

Lightly oil the grill grates. Grill uncovered and undisturbed until the undersides of the ribs are browned and release from the grate, 4 to 6 minutes. Turn the ribs and grill uncovered until browned and a thermometer inserted close to the bone, but not touching it, registers 55 °C, 2 to 4 minutes. Then remove from the grill and let rest for 5 to 10 minutes.

Finally, serve with chimichurri.
