Prepare the grill for two-zone grilling (direct and indirect heat at medium to high temperature) and preheat it. Clean the grill grate with a brush and brush with oil. Lightly toast the cut kaiser rolls cut-side down over medium heat until golden brown. Then spread mayonnaise on the cut sides of the rolls and place lettuce leaves on the bottom halves.

Place a cast-iron skillet on the grill or stove, add the bacon slices and fry them over medium heat until the fat is rendered and the bacon is beautifully crispy and golden. Transfer the cooked bacon to a paper towel to drain excess fat, but leave the skillet with the drippings on the heat. Place 2 slices of crispy bacon on the lettuce for each sandwich.

Season the beef steaks with salt and pepper on both sides. Grill them over direct high heat to taste, approximately 2 minutes per side for medium-done. Place the finished steaks on the prepared sandwiches and immediately top with cheddar slices so that they melt slightly from the heat.
