Preparation and marinating
In a large glass baking dish or bowl, whisk together all the marinade ingredients (chopped jalapeño, minced garlic, chopped coriander, orange, lime, and lemon juice, apple cider vinegar, olive oil, ground cumin, salt, and black pepper) until combined.
Place the flank steak in the marinade in a single layer and turn it to coat thoroughly. Cover and refrigerate for at least 1 hour, but no more than 8 hours (longer marinating would start to break down the texture of the meat).
Grilling and serving
When you are ready to grill, preheat an outdoor grill to medium-high heat.
Chef's tip
For the juiciest and most flavorful result, ask for outside skirt steak or high-quality aged flank steak.
Remember, the longer you marinate the meat, the more tender and flavorful it will be. However, grill it within 8 hours at the latest to maintain the correct texture of the meat.
