FLAVORED MAYONNAISE
- 80 g mayonnaise
- 1 teaspoon soy sauce
- 1⁄2 tablespoon Sriracha chili sauce
- 2 teaspoons lemon juice
SALAD
- 100 g iceberg lettuce
- 6 mint leaves
- 2 tablespoons finely chopped fresh coriander
- 15 g chopped unsalted peanuts
- 10 g finely chopped shallot
- 10 g finely chopped red onion
SANDWICH
- 2 boneless chicken thighs with skin
- 2 teaspoons salt
- 2 pinches freshly ground pepper
- 2 tablespoons vegetable oil for searing the meat
- 4 buns (Kaiser rolls)
- 1 tablespoon softened butter
FLAVORED MAYONNAISE INSTRUCTIONS
- 1Mix all ingredients in a bowl and refrigerate.
SALAD INSTRUCTIONS
- 1Cut the iceberg lettuce and mint leaves into fine strips and mix with the other ingredients in a bowl.
SANDWICH INSTRUCTIONS
- 1Preheat the oven to 180 °C.
- 2Season the meat with salt and pepper on both sides. Heat oil in a pan over medium heat and cook the meat skin-side down for 3 minutes. Flip the meat and cook for 1 minute. Transfer the seared meat to the preheated oven and bake for another 6 minutes.
- 3Remove the cooked meat from the oven, place it on a plate, and let it rest for 5 minutes. Then cut each piece of meat in half.
- 4Slice the buns lengthwise, butter the cut sides, and toast them golden brown on a moderately hot pan. Spread the flavored mayonnaise on the toasted sides of the buns. Place a quarter of the meat and a quarter of the salad on the bottom half of the bun, then cover with the top half.
