Preparation method

Preheat the oven to 180 °C.

Trim the fins off the fish with scissors. Wash it under cold running water and dry thoroughly. Season it with salt and freshly ground pepper on all sides and inside. Then dredge it in plain flour. Shake off any excess flour. Insert sage into the fish and sprinkle the fish with caraway.

In a non-stick pan over medium heat, melt the clarified butter, place the fish in it and pan-fry it until golden brown on each side, about 2 minutes.
