  • dough for 1 pizza
  • 1 large tomato
  • 180 g canned crushed tomatoes
  • 130 g Mozzarella di Bufala
  • 2 pinches of salt
  • 1 tablespoon olive oil
  • 10 basil leaves
 

INSTRUCTIONS

    Score the top of the tomato with a small knife in a cross shape, cutting only through the skin, and immerse it in boiling water for 20 seconds. Immediately transfer it to a bowl of ice water and let it cool for 1 minute. Then peel it and slice it into 0.5 cm thick rounds.

    Slice the mozzarella. Blend or strain the canned tomatoes and mix with salt and olive oil.

    Spread the prepared stretched dough for 1 pizza with the tomato mixture, evenly arrange the tomato slices, and bake on a fully preheated baking sheet or pizza stone in an oven heated to maximum for 3 minutes.

    Remove the pizza from the oven, arrange the sliced mozzarella on top, return to the oven, and bake for another 1 minute until the mozzarella just softens but doesn't melt completely.

    Remove the finished pizza from the oven and arrange basil leaves on top.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
