INGREDIENTS

  • 4 boneless pork neck slices
  • 150 g peeled onion
  • 300 g Edam cheese 45%
  • 70 g butter
  • 400 ml cream, min. 31%
  • 100 g canned sliced mushrooms
  • salt
  • freshly ground pepper
  • 3 tablespoons soy sauce
  • 1 level teaspoon curry powder
  • 1 level teaspoon sweet paprika + for sprinkling
  • 1 level teaspoon grated nutmeg

WINE PAIRING

  • Pork is best enjoyed with a fuller-bodied white wine.

INSTRUCTIONS

    Preheat the oven to 170 ˚C.

    Lightly pound the meat and generously salt and pepper it on both sides. Slice the onion into 0.5 cm thick rings. Grate the Edam cheese coarsely.

    Grease a baking dish with butter and cut the remaining butter into cubes. Spread them over the bottom of the baking dish. Place the meat on top, drizzle with soy sauce, and sprinkle with curry powder, sweet paprika, and nutmeg.

    Arrange the mushrooms over the meat, then the onion, and cover everything with grated cheese. Pour cream over it, lightly sprinkle with sweet paprika, and bake in the preheated oven for 1.5 hours. Serve with steamed rice.
Tip
You can use 200 g of Edam 45% and 100 g of smoked Edam.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
