INGREDIENTS

  • 1 apple
  • 2 pork chops
  • 20 g finely chopped onion
  • 60 ml apple cider
  • 1 tablespoon brown cane sugar
  • pinch of ground cinnamon
  • 1 teaspoon lemon juice
  • 30 g all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 tablespoon dried cranberries
  • 1 star anise
  • salt
  • pepper

  • Pork is best enjoyed with a fuller-bodied white wine.

INSTRUCTIONS

    Preheat the oven to 180 °C.

    Peel the apple, core it, and slice the flesh. Place in a bowl and add sugar, cinnamon, and lemon juice. Mix well.

    Season the meat thoroughly with salt and pepper on all sides and lightly dust it with flour. Heat oil in a pan over high heat and sear the meat on all sides until golden brown. Set aside.

    Add the chopped onion to the pan and sauté until golden. Add cider, cranberries, and star anise and bring to a boil.

    Arrange the sliced apples with their juice in the pan and place the seared meat on top. Place in the preheated oven for 5 minutes. Let the cooked meat rest for at least 4 minutes at room temperature before serving.
Tip
You will need an oven-safe pan.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
