GUACAMOLE
- 2 avocados
- 2 pickled jalapeño peppers
- 2 peeled garlic cloves
- 10 cherry tomatoes
- green part of 2 spring onions
- 6 tablespoons olive oil
- 1 teaspoon salt
- 2 tablespoons finely chopped coriander
- 2 tablespoons lemon juice
BURRITO
- 8 slices bacon
- 2 avocados
- 2 boneless, skinless chicken breasts
- salt
- ground pepper
- 3 tablespoons olive oil
- 4 tablespoons finely chopped coriander
- 4 tortillas
GUACAMOLE INSTRUCTIONS
- 1Cut the avocados lengthwise in half. Remove the pit and scoop out the flesh with a spoon into a bowl. Mash the flesh roughly with a fork.
- 2Finely chop the jalapeño peppers and garlic. Dice the cherry tomatoes. Slice the spring onion into thin rounds. Add the remaining ingredients, mix everything thoroughly, and let it rest in the refrigerator for 20 minutes.
BURRITO INSTRUCTIONS
- 1Preheat the oven to 180 °C.
- 2Fry the bacon in a dry pan until golden brown and set aside. Cut the avocados lengthwise in half. Remove the pit, peel the flesh, and slice it.
- 3Generously salt and pepper the meat on both sides. Heat olive oil in a pan over high heat and sear the meat for 2 minutes on each side. Then place it on a baking sheet and put it in the oven for 12 minutes.
- 4Transfer the cooked meat from the baking sheet to a plate and let it rest for 5 minutes. Then slice it into thicker pieces.
- 5Briefly warm the tortilla in a dry pan over medium heat. 20 seconds is enough.
- 6Place one-eighth of the guacamole on half of the tortilla, then a quarter of the meat, a quarter of the avocado, a quarter of the bacon, a quarter of the coriander, and finally another eighth of the guacamole. Wrap it up. Prepare all tortillas this way.
Tip
If desired, you can sear the finished burrito on each side for 30 seconds in a pan. You can add grated cheddar to the burrito. You can use baked or cooked chicken from the previous day.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
