Preheat the oven to 170 ºC. Grease a baking dish with 1 tablespoon of lard and sprinkle with breadcrumbs.

Boil the potatoes in their skins in salted water until tender, let them cool, and peel them. Slice them into 0.5 cm thick pieces. Also, slice the meat into 0.5 cm thick pieces. Peel the eggs and slice them. Slice the onion into thin rings.

In a pan over medium heat, melt the remaining lard, add the onion, and sauté until translucent, stirring frequently.
Chef's tip
Pickled cucumbers or vegetables, or cabbage salad, go perfectly with French potatoes.
