MEAT
- 1 clove peeled garlic
- 70 g peeled onion
- 1 small green chili pepper
- 40 g pitted green olives
- 80 g feta cheese
- 400 g ground pork shoulder
- 2 tablespoons finely chopped mint

SALSA
- 1 small salad cucumber
- 1 spring onion (white part)
- ½ green chili pepper
- 60 g pitted green olives
- 1 tablespoon finely chopped dill
- 5 tablespoons olive oil
- grated zest from ½ lemon
- 1-2 tablespoons lemon juice
- salt
- pepper

MEAT INSTRUCTIONS
- 1Finely chop the garlic and onion.
- 2Crumble the cheese roughly by hand and set aside. Cut the chili pepper lengthwise, remove the seeds, and finely chop the flesh. Finely chop the olives.
- 3Except for the cheese, mix all ingredients together in a bowl and let rest in the refrigerator for 20 minutes. Then divide the seasoned meat into 8 portions and form each into a flat patty.
- 4Place the crumbled cheese on 4 patties and cover them with the remaining patties. Press the edges together and shape the meat into a patty.
- 5Heat oil in a pan over low heat and fry the meat until golden brown on both sides.
SALSA INSTRUCTIONS
- 1Peel the cucumber, cut it lengthwise, and scoop out the seeds with a spoon, discarding them. Dice the flesh into 0.5cm cubes.
- 2Finely chop the spring onion. Cut the chili pepper lengthwise, remove the seeds, and finely chop the flesh. Finely chop the olives.
- 3Mix all ingredients in a bowl, season with salt and pepper to taste, and refrigerate for 1-2 hours to let the flavors meld.
Tip
You can roughly blend the olives, spring onion, chili pepper, a tablespoon of lemon juice, olive oil, and a pinch of salt and pepper with an immersion blender, then mix with the chopped cucumber, dill, and lemon zest. Season the salsa with a few drops of lemon juice, or salt if needed. You can use less chili pepper or omit it entirely, according to your taste.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
