Dough preparation and proofing
Sift the semi-coarse flour into a bowl and mix it with a pinch of salt. Make a well in the center of the flour, crumble the fresh yeast into it, sprinkle with a teaspoon of granulated sugar, and pour in a small amount of lukewarm milk.
Let the yeast activate for about 10 minutes. Then pour in the remaining lukewarm milk with the beaten egg. Knead the dough thoroughly until it is smooth and non-sticky. Cover it with a clean tea towel and let it rise in a warm place for about an hour, until it has doubled in size.
Shaping and cooking the dumplings
Turn the risen dough out onto a floured work surface and divide it into 12 equal pieces. Shape each piece into a small flat disc, place fresh blueberries in the center, and carefully wrap the dough to form a dumpling. Let the shaped dumplings rise on the work surface for another 10 minutes.
