Preparation method

Sauté finely chopped shallots and sliced garlic in half of the butter until golden.

Add oyster mushrooms cut into larger pieces. Halve the shiitake mushrooms, leaving smaller caps whole. Sauté everything together for a little longer.

Add orzo and mix with the mushrooms. Add chopped thyme. Pour in the broth and let it simmer gently for about ten minutes, until the orzo is soft. If needed, add a little more broth or water.
