  • 600 g potatoes, cooking type B
  • 1 teaspoon salt
  • 80 g all-purpose flour
  • 3 cloves garlic
  • 2 eggs
  • 1 teaspoon finely chopped rosemary
  • 3 tablespoons milk
  • 60 g soft goat cheese
  • vegetable oil for frying

Instructions

    Peel the potatoes and grate them finely. Add salt, mix, and dust the surface with 1 tablespoon of flour. Let stand for 5 minutes.

    Peel and press the garlic. Add to the potatoes, mix, and squeeze out the water from the potatoes. Add the rest of the flour, eggs, rosemary, and milk, and mix.

    Heat oil in a pan over medium heat and form a 10 cm diameter pancake from 2 tablespoons of batter. Spread 10 g of goat cheese on the pancake and cover it with another 2 tablespoons of batter. Fry over low heat until golden brown on both sides.
Tip
You can use a pancake pan for frying the potato pancakes.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
