- 600 g potatoes, cooking type B
- 80 g all-purpose flour
- 60 g soft goat cheese
- 3 cloves garlic
- 2 eggs
- 3 tablespoons milk
- 1 teaspoon finely chopped rosemary
- vegetable oil for frying
- 1 teaspoon salt

Peel the potatoes and grate them finely. Add salt, mix, and dust the surface with 1 tablespoon of flour. Let stand for 5 minutes.

Peel and press the garlic. Add to the potatoes, mix, and squeeze out the water from the potatoes. Add the remaining flour, eggs, rosemary, and milk, and mix.

Heat oil in a pan over medium heat and form a 10 cm diameter pancake from 2 tablespoons of dough. Spread 10 g of goat cheese on the pancake and cover it with another 2 tablespoons of dough. Fry on low heat until golden brown on both sides.
Chef's tip
You can use a pancake pan for frying the potato pancakes.
