INGREDIENTS
- 4 pork chops, 200 g each
- salt
- coarsely ground pepper
- 2 apples
- 5 tablespoons vegetable oil
- 8 g sage
- 8 g whole cinnamon
- 400 ml apple juice
- 50 g honey
WINE PAIRING
- Pork is best enjoyed with a fuller-bodied white wine.
INSTRUCTIONS
- 1Preheat the oven to 160 ˚C.
- 2Cut the apples into quarters and core them. Season the meat with salt and pepper on all sides.
- 3Heat oil in a pan over high heat and sear the meat on all sides until golden brown, including the fatty side. Set it aside on a plate.
- 4Reduce the heat by half and add the apples to the pan with the meat drippings. Sauté them on all sides until golden brown. Set them aside on a plate.
- 5To the drippings in the pan, add sage, cinnamon, juice, 100 ml of water, honey, and a pinch of salt. Stir and let it reduce to one-third of its volume. Remove from heat. Return the seared meat and apples to the pan, cover with a lid, and place in the preheated oven for 80 minutes.

For preparation, you will need an oven-safe pan with a lid.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
