INGREDIENTS

  • 4 pork chops, 200 g each
  • salt
  • coarsely ground pepper
  • 2 apples
  • 5 tablespoons vegetable oil
  • 8 g sage
  • 8 g whole cinnamon
  • 400 ml apple juice
  • 50 g honey

WINE PAIRING

  • Pork is best enjoyed with a fuller-bodied white wine.

INSTRUCTIONS

    Preheat the oven to 160 ˚C.

    Cut the apples into quarters and core them. Season the meat with salt and pepper on all sides.

    Heat oil in a pan over high heat and sear the meat on all sides until golden brown, including the fatty side. Set it aside on a plate.

    Reduce the heat by half and add the apples to the pan with the meat drippings. Sauté them on all sides until golden brown. Set them aside on a plate.

    To the drippings in the pan, add sage, cinnamon, juice, 100 ml of water, honey, and a pinch of salt. Stir and let it reduce to one-third of its volume. Remove from heat. Return the seared meat and apples to the pan, cover with a lid, and place in the preheated oven for 80 minutes.
Tip
For preparation, you will need an oven-safe pan with a lid.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
