  • 1 sprig of rosemary
  • 2 sprigs of thyme

  • The best choice for fish cuisine are light and less aromatic wines. Choose from white and rosé.

    Preheat the oven to 180 °C. Cut the butter into slices.

    Trim the fins off the fish with scissors. Wash it under cold running water and carefully pat dry. Then season it with salt and pepper on all sides, including the inside.

    Place herbs and 20 g of butter inside the fish. Line a baking tray with baking paper, place 20 g of butter on it, and then the prepared fish. Top the fish with the remaining butter and place the tray with the fish into the preheated oven. Bake for 15 minutes. Serve the fish immediately, drizzled with the butter it was baked in.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
