INGREDIENTS FOR FISH
- 4 halibut fillets (150 g)
- 1 tablespoon lemon juice
- 150 g frozen peas
- 3 cloves garlic
- 1 tablespoon olive oil
- 2 tablespoons butter
- Pea sprouts
- Salt
- Pepper
INGREDIENTS FOR PESTO
- 150 g frozen peas
- 50 g grated Parmesan
- 50 g olive oil
- 2 cloves garlic
- 1 handful fresh basil
- 10 mint leaves
- 1 tablespoon lemon juice
- Salt
INSTRUCTIONS
- 1First, prepare the pesto. Let the peas thaw to room temperature. In a tall container, combine peas, Parmesan, crushed garlic, herbs, and olive oil. Blend until smooth with an immersion blender. Stir in lemon juice and season with salt to taste if needed. Set aside.
- 2Season the fish with salt, pepper, and drizzle with lemon juice. Heat 1 tablespoon of oil and 1 tablespoon of butter in a pan. Sauté the halibut until golden brown. 3 - 4 minutes on each side. Remove from the heat, place a spoonful of pea pesto on each fillet, and let the pesto warm through under a lid.
- 3Peel the remaining garlic and slice it. Sauté the garlic until golden brown in 1 tablespoon of butter, add the peas, and sauté vigorously for just a few minutes. The peas must remain firm and vibrant green. Season with salt and pepper.
- 4Serve the halibut with pesto and sautéed peas, sprinkled with sprouts.
