INGREDIENTS
- 500 g white asparagus
- 100 g Parma ham
- 1 lemon
- 2 tablespoons Parmesan
- 2 heaped tablespoons butter
- 1 teaspoon chopped curly parsley
- 1 teaspoon chopped chives
- 1 sprig thyme
- 1 small clove garlic
- White pepper
- Salt
- 1 teaspoon chopped wild garlic (optional)

INSTRUCTIONS
- 1Preheat the oven to 220 degrees Celsius. Grate the zest from the lemon and squeeze the juice from half of it. In a bowl, mix softened butter, herbs, crushed garlic, lemon juice, and zest from half of the lemon. Season with salt to taste and chill in the refrigerator.
- 2Peel the asparagus with a potato peeler and trim off the woody ends. Cook in salted water for 5 - 8 minutes, depending on the thickness of the asparagus. After cooking, immediately cool in ice water to stop the cooking process.
- 3Wrap the asparagus in Parma ham and place it in a baking dish. Season with pepper, sprinkle with Parmesan, and the remaining lemon zest. Top with herb butter and bake in the oven for 15 minutes.
Tip
The dish is excellent on its own, or serve it with bread or boiled potatoes as a main course.
If it's wild garlic season, don't hesitate to add it to the butter – about 1 teaspoon, chopped. Herb butter with wild garlic will get the right kick.
