INGREDIENTS

  • 1 small orange or purple cauliflower, approx. 500 g
  • 3 teaspoons Za'atar spice blend
  • 2 teaspoons Tahini paste
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped flat-leaf parsley
  • 2 tablespoons chopped chives
  • 1 clove garlic
  • Salt
  • Olive oil

  • Baking paper
  • Aluminum foil

INSTRUCTIONS

    Preheat the oven to 180 degrees - top and bottom heat. Clean the cauliflower of outer leaves and trim the stem. Place the cauliflower in a baking dish lined with baking paper.

    Brush with olive oil, sprinkle with spices, and season with salt. Pour in about 1 dl of water, cover with aluminum foil, and bake for 30 - 35 minutes. Then uncover the aluminum foil, brush again with olive oil, and bake uncovered for another 5 minutes.

    For the dressing, mix tahini paste, lemon juice, 4 tablespoons of water, 2 tablespoons of olive oil, crushed garlic, and salt.

    Serve the roasted cauliflower sprinkled with fresh herbs and drizzled with tahini dressing.
