INGREDIENTS
- approx. 700 g turkey breast fillets
- 200 g American smoked bacon
- 200 g Crème Fraîche cream
- Head of garlic
- 1 small young leek
- 1 tbsp dried sage
- 10 leaves fresh sage
- 2 dcl milk
- 8 pcs small sweet potatoes 1 grains
- Olive oil (total)
- 1 lime
- Chili flakes
- Pinch of cinnamon
- Salt
- Freshly ground white pepper

INSTRUCTIONS
- 1Wash the meat, season with salt and pepper.
- 2Prepare 8 smaller slices, roll them up and wrap with bacon. Sear quickly in a hot pan.
- 3In a baking dish, mix crème fraîche with milk. Add chopped leek, dried sage, season with salt and pepper.
- 4Place the meat into the mixture, top with fresh sage. Bake in the oven at 180 degrees Celsius for about 20 minutes.
- 5At the same time, prepare the sweet potatoes. Cut them into thicker rounds, or halves that are scored (but not cut through).
- 6Place the sweet potatoes on a baking sheet lined with parchment paper, drizzle with olive oil. Season with salt, pepper, and sprinkle with a pinch of cinnamon. Also sprinkle with chili and drizzle with lime juice.
- 7Cut off the top of the garlic head, drizzle with olive oil, and place with the sweet potatoes. Bake together with the meat.
