Preparation method

Heat 1 tablespoon of oil in a pan over medium-high heat. Season the steak with salt and pepper and sear for about 3-4 minutes on each side, depending on the desired doneness. Transfer the finished meat to a cutting board, cover with foil and let it rest for 10 minutes. Then slice into thin strips.

Add the remaining tablespoon of oil to the pan. Add the onion, both bell peppers and sauté over medium heat for about 6 minutes until softened and lightly golden. Add the garlic, coriander, lime juice and spicy tomato sauce. Mix everything well and let it cook briefly, about 1 minute.

Sprinkle a quarter of the cheddar on each tortilla, add some of the meat slices, the vegetable mixture and a little gouda cheese. Fold the tortillas in half.
