INGREDIENTS

  • 120 g tomatoes
  • 4 buns (Kaiser rolls)
  • 70 g sliced bacon
  • 600 g ground beef neck
  • 6 teaspoons butter
  • 4 eggs
  • 4 slices Gouda cheese
  • 8 tablespoons BBQ sauce
  • 60 g pickled onions
  • 2 pinches sweet paprika
  • salt
  • ground pepper

WINE PAIRING

  • For beef, choose a full-bodied, dry, red wine with pronounced tannins.

INSTRUCTIONS

  • 1
Slice the tomatoes into 12 pieces. Slice the onions into rings. Cut the buns lengthwise and toast them dry on a moderately hot pan until golden brown.
  • 2
Place bacon slices on a dry pan heated over medium heat, season with pepper and sprinkle with sweet paprika. Once golden brown on the bottom, flip them. Once golden brown on the other side, set them aside on a plate.
  • 3
Form the meat into 4 patties the size of the buns and season them with salt and pepper on both sides. Place them on the pan with the leftover bacon fat and cook for 3 minutes over low heat. Then flip them and place 1 teaspoon of butter on each. Cook for another 2 minutes.
  • 4
Place 1 slice of cheese on each meat patty and cook for another 1 minute. Set the cooked meat aside.
  • 5
Melt the remaining butter in a pan over medium heat and crack the eggs into it. Let the whites set, the yolk must remain runny.
  • 6
Spread 1 tablespoon of BBQ sauce on each half of the toasted bun. On the bottom half of each bun, place 3 slices of tomato, then the meat with cheese, some onion, cooked bacon, and 1 fried egg. Cover with the top half of the bun.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
