INGREDIENTS FOR MEAT
- 90g slices of pancetta
- 2 sprigs thyme
- 4 portions pork tenderloin, 150g each (5cm diameter)

INGREDIENTS FOR LENTILS
- 200g green lentils
- 65g peeled carrot
- 40g shallot
- 2 cloves garlic
- 1 sprig thyme
- 1 bay leaf
- leaves from 1 celery stalk
- 2 tablespoons red wine vinegar
- 4 tablespoons olive oil
- 1 tablespoon finely chopped basil
- 1 tablespoon finely chopped chives
- 1 tablespoon finely chopped flat-leaf parsley
- pepper
- salt

- Pork meat is best enjoyed with a fuller-bodied white wine.
INSTRUCTIONS FOR LENTILS
- 1Rinse the lentils in cold water, place them in a saucepan, add carrots, garlic, shallots, thyme, bay leaf, and celery stalks, cover with water, and cook until the lentils are al dente, approximately 18 minutes. Drain the contents of the saucepan and discard the thyme, bay leaf, and celery stalks. Dice the carrots, garlic, and shallots into 0.5cm cubes.
- 2Mix the diced vegetables with the lentils, add wine vinegar, olive oil, chopped basil, chives, and parsley, and mix well. Season with salt and pepper to taste.
INSTRUCTIONS FOR MEAT
- 1Preheat the oven to 190 °C.
- 2On a cutting board, overlap ¼ slices of pancetta, season them with pepper, and sprinkle with thyme leaves. Place 1 portion of meat on the pancetta and carefully wrap it. Prepare the remaining 3 portions of meat in the same way.
- 3Sear the meat dry in a hot pan on all sides until golden brown. Start with the side where the bacon joins. Then place it on a baking sheet and put it into the preheated oven for 8 minutes.
- 4Let the cooked meat rest for 4 minutes, then slice it, season with salt and pepper.
