Ingredients
- 8 chicken wings
- 8 bone-in chicken drumsticks 1040 g
- 400 ml dry white wine
- 200 g lemons
- 2 heads of garlic 200 g
- 1 red chili pepper 20 g
- 8 sprigs of thyme
- 12 tablespoons olive oil 180 ml
- 8 tablespoons red wine vinegar 120 ml
- 8 tablespoons honey 288 g
- 4 tablespoons soy sauce 60 ml
- grated zest from 1 orange 250 g
- freshly ground pepper
- salt
- steamed rice
Instructions
- 1Wash the lemons thoroughly in warm water with a brush and cut them into 16 slices. Halve the garlic heads lengthwise. Cut the chili pepper lengthwise.
- 2Cut off the wingtips and halve the wings at the joint. For the drumsticks, cut the meat along the bone and open it up. Season both wings and drumsticks with salt and pepper.
- 3In a saucepan or a deep pan, heat the oil over medium heat and brown the meat on all sides for 3 minutes until golden.
- 4Increase the heat and add the garlic (cut side down), thyme, lemon slices, chili peppers, vinegar, wine, and orange zest to the pan with the meat. Let the wine reduce. Pour in 400 ml of water, honey, and soy sauce. Stir, cover with a lid, and simmer over low heat until tender.
- 5Serve with steamed rice. You can use boneless chicken thighs.
