INGREDIENTS

  • 700 g pork liver
  • freshly ground pepper
  • 100 g peeled onion
  • 120 g chorizo sausage
  • 20 g peeled garlic
  • 10 sprigs of thyme
  • 5 tablespoons vegetable oil
  • 200 ml dry white wine
  • salt
  • 1 tablespoon finely chopped flat-leaf parsley

WINE PAIRING

  • Pork is best enjoyed with a fuller-bodied white wine.

INSTRUCTIONS

    Cut the onion lengthwise and slice into thin wedges. Peel the chorizo and cut into 0.5 cm cubes. Slice the garlic thinly. Tie the thyme sprigs tightly with kitchen twine.

    Cut the liver into 8 slices and season with pepper on both sides. Heat oil in a large deep pan over high heat and gradually sear the liver for 1 minute on each side. Set aside on a plate.

    Reduce heat to medium, add the chopped chorizo to the pan drippings and sauté for 1 minute, stirring frequently. Add the chopped onion and the bunch of thyme. Reduce heat to low-medium and sauté for 4 minutes. Add the garlic and sauté for another 2 minutes. Stir frequently.

    Pour in the wine and let it completely evaporate. Pour in 300 ml of water, season with salt and let it boil for 1 minute. Add the liver, cover the pan with a lid, reduce heat to low and let it simmer for 10 minutes. Finally, stir in the chopped parsley.
Tip
Instead of chorizo, you can use csabai sausage or another spicy sausage.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
