Preparation method

Preheat the oven to 160 °C.

Finely chop the onion. Peel the garlic. Cut two cloves of garlic, each into 6 pieces. Press four cloves and finely chop the rest. Cut a portion of the bacon into sticks 0.6×3 cm and place in the freezer for 20 minutes. Cut the remaining bacon into 1 cm cubes.

Make incisions in the meat with a thin knife and insert the chopped garlic and stiffened bacon sticks into them. Season the meat thoroughly with salt, freshly ground pepper on all sides, and coat in flour. Tap off any excess flour from the meat with your fingers.
