- 200 g of pre-cooked chickpeas
- 100 g of pre-cooked beetroot
- 2 tbsp of olive oil
- 1 clove of garlic
- 1 tbsp of nutritional yeast
- 4 sheets of whole wheat tortillas
- 100 g of cucumber
- 100 g of carrots
- 100 g of sugar snap peas
- 1 handful of iceberg lettuce
- 1 pinch of salt
- 1 pinch of pepper
When preparing the hummus, first blend the chickpeas together with the beetroot, olive oil, garlic, nutritional yeast, and 4 tablespoons of water until smooth. Season the hummus with salt and pepper.
Spread the tortillas on the kitchen counter and spread the prepared hummus evenly over each sheet (do not spread the hummus all the way to the edges so it does not leak when wrapping). Cut the cucumber and carrot into thin strips. Place the peas and some of the carrot, cucumber, and iceberg lettuce in the middle of each tortilla.
Wrap the tortillas and serve or store in the fridge.
