INGREDIENTS
- 500 g ground beef neck
- 130 g bacon
- 150 g smoked Edam
- 80 g onion
- 2 tablespoons olive oil
- 120 g breadcrumbs
- 100 g soft quark
- 2 eggs
- 4 tablespoons cream, min. 31%
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 2 tablespoons finely chopped flat-leaf parsley

INSTRUCTIONS
- 1Preheat the oven to 200 °C.
- 2Coarsely grind the meat.
- 3Cut the bacon and cheese into 0.5 cm cubes. Finely chop the onion.
- 4Heat oil in a pan over high heat, add bacon and onion, and sauté for 2 minutes, stirring frequently. Transfer to a bowl. Add the remaining ingredients, mix thoroughly, and form 30 g rolls with hands dipped in cold water.
- 5Line a baking sheet with parchment paper and arrange the meat rolls on it. Place in the preheated oven and bake for 20 minutes.
Tip
First, form a small patty from the meat and fry it in 1 tablespoon of oil in a pan. Let it cool partially and taste it. This way you will find out if the meat is seasoned enough. Season the meat with salt if necessary.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
