INGREDIENTS FOR PULLED BEEF
- 1 kg beef neck (you can use shoulder or beef ribs)
- Taco seasoning mix
- 250 ml beef broth

- 2 ripe avocados
- Small red onion
- 1 large tomato
- Cilantro
- 1 jalapeño pepper (to taste)
- 2 cloves of garlic (pressed)
- 1 lime

INSTRUCTIONS FOR PULLED BEEF
- 1Wash the beef shoulder, dry it, and rub it with the seasoning mix on all sides.
- 2Set up the grill for indirect grilling (heat one side of the grill, leave the other side cool). Place the beef shoulder on the cool side of the grill, cover, and let it grill at a low temperature (about 110-130°C) for 5-6 hours, or until the internal temperature of the meat reaches 93°C.
- 3During grilling, you can occasionally baste the meat with beef broth to keep it moist.
- 4When the meat is done, remove it from the grill, wrap it in aluminum foil, and let it rest for about 30 minutes.
- 5After resting, "pull" the meat into strands using two forks.
FINAL INSTRUCTIONS
- 1First, prepare the guacamole. Place the avocado flesh in a bowl, add the juice of one lime, and mix. Then add the pressed garlic, chopped tomato, jalapeño pepper, red onion, and cilantro. Mix everything and season with salt.
- 2Spread guacamole on the corn tortilla/taco shells. Place the pulled beef on top of the guacamole.
- 3Finally, add chopped red onion and jalapeño peppers to the mixture.
