Preheat the oven to 200 °C and prepare an oven-safe pan.

Clean the beef sirloin and season with salt and pepper on both sides.* Heat the pan over high heat, sear the meat quickly (1 minute on each side), transfer to the oven and bake for 6–7 minutes at 190–200 °C.

Meanwhile, in a small bowl, mix radishes, Dijon mustard, yogurt, salt, and pepper.
Chef's tip
It is always better to roast a larger piece of sirloin (at least 400–500 g). In this case, the baking time will extend to 11–12 minutes. If the meat is too rare for you inside, return it to the oven for another 5–10 minutes.
