INGREDIENTS
- 250 g cooked jasmine rice
- 3 eggs size M
- 60 g whole grain spelt flour
- 40 g fresh lamb's lettuce
- ½ teaspoon chili flakes
- Juice of ½ small lemon
- Salt
- Pepper
INSTRUCTIONS
- 1First, heat up the waffle maker.
- 2Place the rice, 3 eggs, and flour into a tall container and blend until smooth using a hand blender. Pour the batter into the waffle maker and bake for about 5 minutes. It will make 4 waffles (7 cm × 7 cm in size).
- 3Meanwhile, in a larger bowl, massage the lamb's lettuce with salt, pepper, chili, and lemon juice by hand. Set aside and prepare a fried egg on a small pan without oil (3–4 minutes on low to medium heat).
- 4Serve the finished waffles with the egg and lamb's lettuce.
