INGREDIENTS

  • 50 g butter (melted)
  • 1 teaspoon lemon juice
  • 150 ml semi-skimmed cow's milk (or any plant-based milk)
  • 120 g wholemeal spelt all-purpose flour
  • 100 g granulated cane sugar (50 g for the batter, 50 g for coating)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon (1 teaspoon for the batter, 1 teaspoon for coating)

METHOD

    First, preheat the oven to 180 °C and prepare a non-stick doughnut pan.

    While the oven is preheating, prepare the doughnut batter: In a medium bowl, mix melted butter with 1 teaspoon of lemon juice and 150 ml of milk. Add all-purpose flour, cane sugar, baking powder, baking soda, cinnamon, and a pinch of salt to the liquid mixture and work into a smooth batter. Then pour the prepared batter into the doughnut pan.

    Place the pan in the oven and bake the batter for 10–12 minutes until golden brown at 175–180 °C. Meanwhile, mix sugar with cinnamon in a deep plate.

    After baking, coat the warm doughnuts in sugar, then let them cool for about 30 minutes and finally serve.
