Work all the ingredients, except for the jam and 50 g of smooth spelt flour for dusting, into a smooth dough. Wrap it in cling film and let it rest in the fridge until the next day.

The next day, knead the dough with your hands and roll it out on a floured work surface (use the remaining 50 g of smooth spelt flour) to a thickness of about 3 mm. Cut out circles or other shapes and place them on a baking sheet lined with baking paper.

Bake the circles in a preheated oven at 165-175 °C for 10 minutes until golden brown.
