Preparation of crust and filling

Prepare a cake tin (Ø 25 cm); if you have an older one, we recommend greasing it with oil. Prepare the bottom layer of the cake: blend the rolled oats, coconut oil, and peanut butter together and press the resulting mixture into the tin. Place the tin in a preheated oven and bake for 10 minutes at 160–170 °C. Let the baked crust cool in the fridge for about 15 minutes.

Meanwhile, in a larger bowl, whisk the curd with honey and lemon juice and set aside. Put the agar in a small saucepan, pour 4 tablespoons of cold water over it, and let it swell (it will take about 15 minutes). Then bring the agar with water to a boil over low heat, then add 2 tablespoons of the curd cream to the saucepan and let it simmer together for 2 minutes. Whisk the cooked agar mixture into the bowl with the rest of the curd cream.

Assembly and chilling

Clean the strawberries, cut them in half, and trim the bottom part of each piece flat. Prepare the cake tin with the cooled crust and arrange the strawberry pieces in it so that the cut side faces outwards and fits tightly against the tin. Pour ½ of the curd cream into the prepared tin. Chop the remaining strawberry pieces into smaller pieces and layer them on top of the cream. Finally, pour the rest of the curd cream over everything.

Chef's tip

Agar is a natural gelling agent made from seaweed and contains a high proportion of polysaccharides, minerals, vitamins, and proteins. When mixed with water, it forms a jelly-like gel that holds its shape very well, which is why it is often used as a healthier alternative to gelatin in various frozen desserts, puddings, or jellies. Agar is sold in the form of powder, flakes, or sheets and can be found in health food stores.
