INGREDIENTS FOR THE BASE
- 2 large carrots
- 2 medium bananas + 2 medium bananas for the frosting
- 2 medium apples
- 250 g fine oat flakes
- 4 tablespoons Dutch cocoa + 4 tablespoons for the frosting
- 3 tablespoons maple syrup
- 2 tablespoons coconut oil (solid state) + for greasing the tin
- 2 teaspoons baking powder
- 100 ml water
- Shredded coconut (for dusting the tin)
INSTRUCTIONS
- 1Preheat the oven to 180 °C.
- 2Clean the carrots, grate them finely, and squeeze out any excess juice.
- 3Peel the bananas, remove the cores from the apples. Blend both and mix.
- 4Blend the oats into flour, add all ingredients for the base and mix them into a dough.
- 5Prepare a 25 cm diameter cake tin and line it with baking paper. You can grease its sides with coconut oil and sprinkle with coconut.
- 6Place the dough into the prepared cake tin.
- 7Place the tin with the dough into the oven and bake for approximately 45 minutes at 180 °C. At the end of baking, test with a skewer to see if the base is baked. If the skewer is still moist and has dough residue on it, let the base bake for a little longer.
- 8Meanwhile, prepare the frosting: Peel the bananas, blend them, and mix with cocoa.
- 9Let the baked base cool down, then spread it with the prepared frosting.
