Ingredients

  • 200 g fresh blueberries
  • 500 g semi-fat soft quark
  • 400 g wholemeal spelt plain flour
  • 20 g fine oat flakes
  • 100 g honey
  • 7 g baking powder
  • 150 g butter
  • 3 eggs
  • zest of 1 lemon

Instructions

    First, preheat the oven to 170–175 °C and prepare a baking dish (21 cm × 21 cm).

    Meanwhile, in a large bowl, mix the flour with honey, baking powder, and room temperature butter. The resulting dough should resemble classic crumble for pies. Pour ¾ of the dough into the prepared baking dish and press it down with your hand.

    To prepare the quark part of the cake, mix quark, eggs, and the zest of 1 lemon in a large bowl. Mix until smooth and then pour the resulting cream over the smoothed dough in the baking dish.

    Next, add blueberries on top of the quark cream. Add finely ground oats to the remaining ¼ of the dough, mix lightly, and sprinkle the resulting mixture over the surface of the cake to create a crumble topping.

    Place the prepared cake into the oven preheated to 170–175 °C and bake for 45–50 minutes.

    Let the baked cake cool for at least 40 minutes. After cooling, cut the cake into individual portions and serve.

    You can also substitute blueberries with other fruits. The cake will taste great with strawberries, raspberries, or currants.
