INGREDIENTS

  • Cooking Box – Green Curry
  • 300 g (whole grain) rice
  • 300 g chicken pieces
  • Olive oil

INSTRUCTIONS

    Peel and chop the onion. Wash the vegetables, and cut the zucchini, eggplant, bell pepper, tomatoes, and cucumber into pieces.

    Prepare the rice according to the instructions on the package.

    In a large pan, heat 2 tablespoons of (olive) oil and fry the chicken and onion for 4 minutes over medium heat.

    Add the remaining vegetables and fry for 4 minutes over medium heat.

    Add the green curry paste and fry for 2 minutes over medium-high heat. Add the coconut milk and let the curry simmer for 15 minutes over low heat with a lid. The coconut milk may be too thick. Heating makes the coconut milk more liquid.

    Serve the green curry with rice.
