INGREDIENTS
- 200 g fresh broccoli
- 250 g sweet potato
- 3 eggs
- 100 ml cooking cream 12%
- 1 clove garlic (crushed)
- 1 pinch salt
- 1 pinch pepper
INSTRUCTIONS
- 1Preheat the oven to 180 °C.
- 2Fill a large pot about halfway with water.
- 3Peel the sweet potatoes and cut them into slices about 0.5 cm thick, wash the broccoli and divide it into florets.
- 4Place both ingredients into boiling water and cook for 2 minutes over medium heat.
- 5Arrange the cooked broccoli and sweet potatoes in a small baking dish.
- 6Then whisk the eggs together with the cream and crushed garlic, and pour this mixture over the vegetables in the baking dish (20 cm × 30 cm).
- 7Season everything with salt and pepper, place the dish in the oven and bake for about 15–20 minutes at 170–180 °C.
