INGREDIENTS

  • 250 g raw broccoli
  • 1 medium white onion
  • 300 g turkey breast
  • 200 g whole wheat couscous, dry
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 2 cloves garlic (pressed)
  • 250 ml soy cream (you can substitute with rice cream or 12% dairy cream)
  • Salt
  • Pepper

INSTRUCTIONS

    Wash, clean, and divide the broccoli into florets. Peel and finely chop the onion. Cut the turkey breast into strips.

    Bring water to a boil in a pot, then add the broccoli and let it cook for about 5 minutes over medium heat. After cooking, drain the broccoli and set it aside for now.

    Now prepare the couscous according to the package instructions – pour boiling water over it in the prescribed ratio (usually 1.6–2 parts water to 1 part couscous), cover, and let it stand for approximately 10–15 minutes until all the hot water is absorbed into the couscous.

    While the couscous is cooking, prepare the turkey mixture. Heat 1 tablespoon of olive oil in a pan, add the chopped onion, and sauté it for about 2 minutes over medium heat. Then add the sliced turkey breast, salt, pepper, and dried thyme to the pan and sauté everything for another 7 minutes; in the 6th minute, add the pressed garlic to the mixture and gently sauté it for the remaining 1 minute to release its aroma. Subsequently, pour in the soy cream, add the cooked broccoli to the pan, and let the entire mixture heat through for another 3 minutes.

    Serve the finished turkey mixture with the cooked couscous.
